I made these last night to go with our chili (bc chili and cinnamon rolls, duh). It's a fun twist, and a good way to use up the extra cans of pumpkin in my cupboard.
No-Knead Pumpkin Rolls

The brown-sugar glaze knocks this recipe right out of the park, and the pumpkin is just subtle enough that it doesn't overwhelm you.
So. Yummy.
Also it only takes 1 rise, plus about 30 minutes for the cut rolls to plump up. I put the dough in a warm oven, and it had doubled in about 2 hours. And since it doesn't need kneading (bahaha) I mixed it together with a wooden spoon in less than fifteen minutes (including the cooling time for the hot milk). Final note: I short-cutted all the stove-top portions of the recipe by doing everything in the microwave with no issues.
I actually got 16 rolls from this recipe, so I put the extras in a pie plate and baked them right along with the 9x13 pan.
They are perfect with a cup of hot, black coffee or a steaming bowl of chili, or with chai, or just plain for breakfast. I am not speaking from experience on all of these; I mean, that would be like four rolls, and I just, um... uh... could never, ahem... eat that many in such a short time... cough.

Josh doesn't understand why we think chili and cinnamon rolls go together...I haven't been able to explain this sufficiently to him. But it makes sense to me...
