I also like Low Carb English muffins. Maybe not as much as Real English Muffins, but they're sufficient to satisfy my bread cravings. I've been using THIS recipe with Eggs for breakfast. It definitely has a Nutty flavor to it, and it's a bit crispier than a normal muffin and they definitely need to be toasted to be edible, but again, satisfying if you're trying not to eat bread.
This week has been cold and rainy with weather in the 40's and 50's which means garden season is pretty much done. Last week I ripped out all remaining plants (except some hopeful carrots) and prepped my garden plot with some compost soil, and this week I went through and planted some over-winter rye & buckwheat. I also planted out my tulips, hyacinths, and crocuses. I went a little crazy with tulips this year. I bought three different varieties from Burpee: an Early Blooming tulip, Mid Blooming, and a Late Blooming variety so that I can have flowers all spring. They should make very nice Cut flowers. I also got permission from the building manager to plant some tulips in the back where there have just been gross lava rocks. I bought two different varieties from Home Depot & some alliums. It's shady enough back there that I'm concerned they won't come up. We'll just have to see in the spring.
On top of the weather, this week has been Concerts and Wedding dress shopping. Regarding Concerts: On Friday, we saw The Arkells with opener Irontom. Both were Excellent for a variety of reasons, but primarily for their eccentric lead singers. Saturday night we saw Grammy nominated Milk Carton Kids and openers Sammy Miller and the Congregation. Both of these bands were not only comprised of Excellent musicians, they were HILARIOUS! I've never laughed so much at a concert before.
Regarding wedding dress shopping: I checked out two places, one on Thursday and one today. I think I found "The" Dress on my Thursday shopping trip, but I'm hoping that I can find a better price. The place I checked out today will be having a Trunk Show with 10% off the designer's dresses next week, so I booked a time for Friday. I'm prepared to lay down some serious cash here.

ReplyDeleteHow is the low-carb thing going? We have been talking a lot here about trying to lessen carbs and dairy, but man. I love cheese. I'm also keeping a food journal this week and emailing it to a friend as a form of "accountability". Makes me think about it when I have to write down "3 brownies"
ReplyDeleteWell, we haven't cut out cheese or dairy, it's a huge part of the diet. If weight loss stalls it's one of the things you can remove to keep going. It's hard to be really low carb, especially with food at work. Actually bringing food to work requires some prep that I just don't have time for. I've thought about trying to keep better track of what I eat, but it's just SO much work. If I do start keeping track, I want to have a better idea of actual calories. Like I just had Ramen for lunch - not low carb, definitely not low sodium, and I have NO idea how many calories was in that delicious bowl of soup.
