All the Beef!

I've made Beef Stew for dinner twice this week! I did my usual thing where I made a roast in the crock pot & used it for various meals the rest of the week. I think it was a Chuck Roast. I browned it before putting it in the crockpot with 2 8oz cans of crushed tomatoes & 5-8 whole heads of garlic. This time around I added a couple splashes of Worcestershire sauce, Red Wine Vinegar, and some thyme and oregano.
I use the broth/tomatoes for soup later & typically shred the beef. Today, I had about a cup of the broth left, just enough beef for the stew, and a lonely turnip. So, this is what I ended up doing:

Leftover shredded beef
About a cup of leftover broth/tomatoes
1x Cup of the latest Home-brew (Milk Stout)
1x Small Turnip
1x Celery stick
2x Garlic Cloves
1/2 medium White Onion
1/2 Cup Carrots (frozen from the garden)
1x small scoop of better than bouillon
+Herbs  (rosemary, oregano, thyme, fennel seed, cumin)
-simmer until the veggies are soft.

I also initially thought I wanted to make Shepherd's Pie, but decided against the potatoes since the low carb goal and everything, so instead I made low carb biscuits. I used this recipe from Wholesome Yum. I didn't have parsley so I subbed Rosemary. Anthony loved it and they were pretty good with the ttew. However, making these has only reaffirmed my strident dislike of Coconut Flour. Next time I'll search for a  biscuit recipe for that does not include coconut flour.
